Vegetarian

I am not a vegetarian, but I had to make a vegetarian dish for one of my pottery mate because he was so kind to bring me some West Indian food this past Monday. In this kind of 101 degree weather to drag himself to buy me a good food was very touchy. So I went down to Chinatown trying to buy some good vegetarian Chinese food. Almost everything has pork in it. You might not see the pork, but it's in it. Trust me. We love pork!!

Don't get me wrong, there are some buddha food in Chinatown but there are nothing like the perfect vegetarian food that you can find in Taiwan. Perfect vegetarian food is prepared with good sauce and it takes long time to make good one. The Chinatown style is just steamed vegetable with some soy sauce based brown sauce. After walking all over Chinatown, I decided that the last measure was to cook it myself.

And, it turned out perfect (my pottery mate had so much of it and I thought so!) and it was so easy to make, some rice noodles, mushroom, fried tofu, napa cabbage, carrots, and scallions. That was it!! My kitchen was a mess afterward and I was sweating all over. After all, I did not have a wok (don't know the point of having one) so I used my 3.5 qt. le cueuset pot to stir fried all the ingredients and mixed in my rice noodles. Three Times!!! I mean repeating all steps, stir fly and mix together because there were too much rice noodles and the pot was so small. God, maybe I need a big wok.
