Vegetable Roll


I have decided that I need to cut down the carbohydrate consumption.  I love bread, good bread.  I would go out of my way to get a loaf of good bread.  But I have realize that if my daily food consumption was to be reflected in the food pyramid, it would looks more like a pyramid that was weathered by the nature elements over several million years and only the base is left.  It is just not healthy.  

So, I wrapped all kinds of vegetables in the vietnamese rice paper and mix peanut butter and Hosin sauce as the dipping sauce.  It is so great and healthy.  I have wrapped the following ingredients in the rice paper- thick seaweed (kombu), shredded carrots, shredded red or yellow peppers, hard tofu, lettuce, mushroom.  Basically, you can wrap anything you want in this thin rice paper.  I feel full from the vegetables and not crave for a piece of bread.
