Simple Dinner - Egg Frittata

I was so hungry and forgot to take a picture before diving into this dish.   Yesterday,  I spent 3 hours in the afternoon organizing my recipes.  What can I do in the middle of the winter storm?  I have so many recipes that I got from the magazines laying around the apartment.  Once I started going thru them, there are so many egg frittata dishes that I collected.  I realize that it is such a simple dish to make and you can use all of your left over vegetable and meat in it.

That was what we had for dinner, kale spinach mushroom tomato cheese frittata and meatball (demand from my husband!).  It was yummy!
