Tainan is the home of many delicious food. My parents and I took the express train down from Taipei one day just to have good food. The express train is so convenient to travel on the west coast of Taiwan (from Taipei to Tainan normally takes 4 hours but express train only takes 1.50). I was craving for this special dish for a long time. When I was in high school, my family took annual around the island trip during Chinese New Year holiday. We always stopped by Tainan to have the food (Tainan is also where my father grew up and when people get older, they miss the food they used to have).
Tainan food has its acquired taste because it's on the sweeter side. Tainan culinary culture is heavily influenced by Japanese. During the Japanese occupation, Tainan was the seaport where the boats came in from abroad. This particular dish is stir fried with garlic, scallion, onion, little chili pepper and a lot of sugar. Unlike other stir fried dish, it also has a lot of sauce. So yummy!
