Turkish Grape Leaf - Yaprak Sarmasi
I love this dish!! When I was in the college, I had this Turkish roommate, Oz. She taught me how to make this fabulous dish. Beef, rice, some spices wrapped in grape leafs and cook with tomato paste and olive oil. It only takes about 1 hour to cook but the wrapping takes some time.
College was a lot of fun because I lived in a house with total 5 girls- 1 American, 1 Indian, 1 Finish and 1 Turkish and me (Taiwanese). It was truly an international house. Oz is a computer science professor in Turkey now. Maybe one day I will visit her in Ankara. The Finish girl married a Columbia man and I lost contact with her. She used to eat her grilled cheese sandwich with Campbell tomato soup (I learned to love eating the same thing with her sometimes). The Indian girl is actually an American and she was also an aerobic teacher in school while she was studying her PhD in material engineer. She used to eat fried chicken and pizza straight out of the fridge in the morning. But her mother bought her some indian spices and food and that tasted so good. My other American roommate is a controller in Washington D.C. now and she makes this great mashed potato (with a lot of butter). I was going through my recipes and saw the notes I made while living with those girls. What a good memory!

One of the good things I have ever made was to teach Vivian yaprak sarması... I remember her as a fast learner and an excellent cook... I never forget her notes on the refrigirator saying "Oz, yaprak sarmasi is ready"... Wow! Thanks Vivian :)

Hi Amy,
All I did was using ground beef (1.5 lb), carolina rice (1/2 C), chopped onion (1C) and salt. Wrapped in the grape leaf where you can get at the Greek grocery.
Then I put grape leafs on the bottom of the pot and placed the rolls tightly. Add tomato paste (or you can just use tomato sauce to cover the grape leafs and add olive oil. That's all!!! Super easy.
